Well we haven’t given you a recipe for a while! So whilst everyone is at home what beter to bake than healthy Lemon Shortbreads!

You will need these ingredients:


3/4 cup cashew nuts

1/3 cup buckwheat flour

Zest from one lemon

1 tbsp coconut oil

3 tbsp maple/rice syrup

1 tbsp Vanilla Zilla blend

For the Icing-

2 tbsp coconut cream

Tsp maple/rice syrup

Tbsp coconut oil

Dash vanilla

Method: Preheat the oven to 175c and line a tray with baking paper. Place the cashews into the food processor and blend to form a flour. Add in the rest of the ingredients and blend until they come together to form a dough. Roll the mixture Ito balls, then flatten to create small cookie shapes. Place these onto your baking tray and bake in the oven for around 9 minutes, until golden. Transfer the cookies onto a wire wrack and allow to cool completely. For the cookie icing, combine the coconut cream, coconut oil, vanilla and sweetener and mix well. Place this into the fridge for an hour to thicken.

Spread a little icing over the cookies (once cooled) and decorate!
