This is the perfect mid-week one bowl recipe! Perfect as a bowl or in a burrito!


1 red onion

1 clove garlic

1 can chopped tomatoes & 1/2 can water

Tsp paprika

Pinch of chilli flakes

2 tbsp tomato puree

Tbsp coconut aminos

90g sweetcorn

1 can red kidney beans- drained and rinsed

Tsp One Earth Chocolate Dream powder


Start by finely dicing the onion and garlic clove. Heat a little oil in a pan over a medium heat and add in your chopped garlic and onion.

Sauté these until the onion starts to soften and become translucent. Pour in your chopped tomatoes, spices, coconut aminos and tomato puree and stir everything together.

Reduce the heat to a simmer and add in your kidney beans.

Fill half of the tomato can with water and pour this into the pan also.

Pop the lid onto the pan and leave this to simmer for about 15 minutes or until the liquid has reduced and thickened.

Stir through the frozen sweetcorn and Chocolate Dream Powder and continue to heat until your corn is cooked.

Here Charley served this topped with a fried egg and some herbs, but you could add rice, pasta or even serve with wraps.
