Charley has done it again! This cheesecake looks AMAZING! And the Rejuvenate Your Soul Blend will go soooo well in this cheesecake- as it’s so zingy!!!! (AND packed full of vitamin C!!)



3/4 cup rolled oats

2 tbsp coconut oil

1/2 cup almonds

3/4 cup dates


2 cups cashew nuts

1 1/2 ripe mangos

3 tbsp maple syrup

4 tbsp coconut oil

Pinch of turmeric

1 Tbsp One Earth Rejuvenate Your Soul Blend

Dash of vanilla extract

1 whole passionfruit

1/2 cup coconut cream

1/2 cup coconut milk (drinking kind)


Begin by making the base for the cheesecake and pour the oats and almonds into your food processor. Pulse these two together for a few seconds to create a crumbly mixture. Add in the coconut oil and dates and blend until everything has bound together.

Transfer this into a loose bottom cake tin. I used a fairly large one here) and press the mixture into the base of the tin. Pop this into the freezer whilst you make the filling. Into a high speed blender or food processor, pour in all of the cheesecake ingredients (apart from the passionfruit) and blend until smooth and creamy. This can take a little while and you may need to scrape down the sides to insure that everything blends evenly. Pour the filling over the cake base and smooth out.

Scoop the filling from inside the passionfruit and scatter this over the surface of the cake. Using your spoon, carefully swirl this into the cheesecake filling to create a pretty pattern. Place the cake into the freezer for 3 hours or overnight to set. Allow to thaw slightly before slicing and serving. I love to top this with a drizzle of coconut cream and some rose petals for decoration.
